Agreeing totally when you say "we don't deal with reality itself" but rather only with models about it, I point to the old definition of phenomena. Reality in itself is an absolute concept never at reach of any human being. Sure, it seems useful and appropriate to put Reality as a limit to which all sciences must converge, but even this convergence is not warranted but as a metaphysical idea. For instance, perhaps even a silly one, a kind of thought experiment: Let's consider that our dreamed unified theory encompassing Quantum Physics and Special Relativity might never come! Not because human intelligence (AI included) is not powerful enough to formulate excellent hypotheses, but just because the Universe has an unsurpassable, irrational gap between these fields.
Within this framework, I would not talk about "true models of reality", but only on "best models". A more rigorous language here may lead to a better understanding.
Not much time ago, I wrote a brief essay on the metaphysical unfoldings arisen by the unavoidable thought that 200 years ahead the most advanced theories of our times will be seen as ridiculous.
